Below are some of our favorite family recipes. Some of these recipes have been in our family for decades! Bookmark this page as I’ll be adding more recipes in the future including banana bread, snickerdoodles, and French tea puffs. Until then, from my family to yours…enjoy!
Note: Please keep in mind on all recipes that the oven temperature may have to be adjusted due to altitude.
Gluten Free Delicious No Bake Cookies
Combine in a large pan and boil for one minute the following ingredients:
2 c. sugar
1/2 c. rice milk (we use Rice Dream)
1/4 c. cocoa (gluten free/dairy free brand)
1/2 c. butter
Add until smooth -
1 tsp. vanilla
1/3 c. peanut butter (if you have peanut allergies, use sunbutter instead)
Remove from heat and and add -
3 c. oatmeal (gluten free brand)
Stir and drop by tablespoon on a cookie sheet. Cool in the refrigerator before enjoying.
Yield: 18-20 cookies.
Peanut Butter Cookies
1 c. butter
1 c. peanut butter (can substitute sunbutter if peanut allergies)
1 c. sugar
1 c. brown sugar
1 tsp. vanilla
1 tsp. soda
2 1/4 c. flour
Bake at 325. Check after 10 minutes.
Lon’s Lemon Meringue
Mix contents (lemon pie filling) with
1/2 c. sugar
1/4 c. water
2 egg yolks
Stir in 2 cups of water. Cook and stir over medium heat until mixture comes to a full boil. Cool 5 minutes, sitrring twice. Pour into baked 9-inch pie shell
Meringue: Beat 2 egg whites until foamy. Gradually add 1/4 c. sugar, beating until stff. Spread over filling. Brown at 425 for 5 minutes. Cool four hours.
Easy Cheesey PopCorn
Air pop a bowl of popcorn. Melt desired amount of butter and stir. Add the packet of cheese powder that comes in a box of macaroni and cheese. Stir again. Enjoy!
Homemade Hot Chocolate
1/3 c. cocoa
1/3 c. sugar
3 c. water
3 c. canned milk – not sweetened (can substitute regular milk, but the cocoa won’t be as rich)
1/2 tsp. vanilla
In a pan, mix the sugar and cocoa. Add the water and stir until it boils. Boil for one minute then turn off the heat and add the canned milk. Add the vanilla and stir. Serve with “snowman poop” (my daughters’ name for marshmallows!)
